Very good! I didn’t have cucumber so I used scallions and zucchini instead. We made wraps. It was delicious. Will make again!

The dish was really super for a light and cool summer dinner. Minor modifications included using cherry tomatoes versus cucumbers. Added a lot of nice color, texture and a little acid. I also had to adjust all ingredient quantities because my imitation crab came in an 8 oz. package. But the flavor balance was very good and we will surely make this dish again. I would have submitted a picture but we ate it all. 😉
