  • 2 teaspoons minced garlic
  • 15 ounces black beans (rinsed and drained or 2 cups Soaked Black Beans, two cups after the soaking, not before)
  • 1 cup quinoa (rinsed and drained)
  • 2 chicken breasts
  • 2 cups vegetable broth (I make mine homemade in the Instant Pot!)
  • 1 cup salsa (I use homemade salsa but any salsa will work!)
