- 1 cup fresh breadcrumbs (from 2 slices good-quality white bread pulsed in a food-processor)
- 1 large egg
- 1 tsp. chopped garlic (finely)
- 1 tsp. garam masala
- 1 tsp. kosher salt
- 2 Tbsp. vegetable oil (I use olive oil)

- 2 eggplant (medium, about 1 pound each, ends trimmed, cut into 1-inch cubes)
- 3 zucchini (medium. ends trimmed, cut into 1-inch chunks)
- 3 Tbsp. chopped garlic (finely, about 5 large cloves)
- 3 bell pepper (any mix of red, yellow or green, seeded, deveined, and diced)
- 1 bunch scallions (about 8, trimmed and thinly sliced)
- 2 jalapeño peppers (seeded, deveined, and finely chopped)
- 3 Tbsp. peeled fresh ginger (finely chopped, about a 2-inch piece)
- 1/2 tsp. ground turmeric
- 1/2 tsp. saffron threads
- 1/8 tsp. cayenne pepper
- 1 tsp. kosher salt
- ground black pepper (several grinds of fresh)
- 1 cup unsweetened coconut milk (canned, shake can before opening)
- 1 tsp. garam masala
- lemon juice (1 lemon)
- lemon zest (from 1 lemon)
- chopped cilantro (fresh, to taste)
