Ingredients

  • 2 lacinato kale (big bunches of, washed well, stemmed, rolled into a bunch and sliced thinly)
  • 1 clove garlic
  • 1 apple cider vinegar (tbspn)
  • 1 dried thyme (tbspn)
  • 1/2 cup sunflower seeds (soaked for a few hours, drained and rinsed)
  • 1 cup extra-virgin olive oil (I’ve also tried 3/4 oil and 1/4 water with success if you don’t want all the oil)
  • sea salt (I usually put 1-3 tsp, 1 tsp per pound of stemmed and sliced kale for the salad)

    I modified the recipe based on some of the comments and it was great! I used a half cup of high quality olive oil and a half cup of water. I used two garlic cloves and a small handful of pumpkin seeds instead of sunflower seed. The last modification I made was adding a thumbnail amount of ginger. It was delish!

    It turned out good! I used half a cup of oil and 1/2 cup of water instead and it was still fine!

    Added juice from half a lemon to tang it up a bit & used twice the amount of garlic... stupendous!

    Very delicious! I added 3 cloves of garlic because I love garlic and it was too much. The recipe is perfectly proportioned.

    Love this salad! Just make sure if you are only using one head of kale you only use half the dressing. I oversauced it the first time. (I won't make that mistake again!) Made it again today and this time my whole family is in agreement; it's a keeper! A+

    All it needs is some nutritional yeast and some sliced red onion, and your good!! Served at a great little place in old town Baker City Oregon.

    Kale is a little tough so leaving to marinate overnight. Tastes good & garlicky!

    I would not make this again. I found it was salty, even when I added way less.
