- 12 oz. mushrooms (cremini or white button mushrooms, chopped)
- 2 Tbsp. Hungarian paprika (quality, genuine imported)
- 4 tsp. fresh dill
- 2 tsp. dried dill
- 1 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. butter (vegan substitute: vegetable spread, like Earth Balance)
- 2 Tbsp. flour
- 1 cup milk (vegan: use soy or hemp milk)
- 2 cups beef broth (vegan: use vegetable broth)
- 1 Tbsp. soy sauce (Note: You cannot taste the soy sauce in this but it's just enough to contribute a wonderful "umami effect" that you'll love!)
- 1/2 cup sour cream (vegan: use vegan sour cream)
- parsley (chopped, for garnish, optional)

Very tasty recipe and easy to make. If making for more than 3-4 I would increase ingredients

Confession: I had never made my own soup from scratch before making this. This was absolutely perfect! For a mushroom soup, the flavor is so robust and satisfying. This will be my go-to for all upcoming winter seasons
