I have used this exact recipe given to me by my mother. When the peppers are in season, late August, i preserve a years worth in jars. Add everything except the sausage. Bring to a boil and place in canning jars. Add sausage when your ready to eat it. Any sausage will work but it needs to be a dry sausage. Banana peppers come in sweet or spicy so so can have whatever heat level you like. I’ve had this served to me without the sausage but put on schnitzel in Hungary. I prefer it with Hungarian farmers sausage. Hungarian farmers sausage is spicier and has more paprika than the farmer sausage in grocery stores. You may have to go to an Eastern European deli to find it.
