  • 1 1/4 pounds waxy potatoes (peeled and cut into pieces)
  • 1 tablespoon oil
  • 5.25 ounces salami (skin removed and diced)
  • 1 bunch spring onions (sliced)
  • 1 red bell pepper (diced)
  • 15 ounces sauerkraut (jars)
  • 1 cup sour cream
  • 4 eggs
  • 1/3 pound feta cheese (crumbled)

    Directions

    1. Preheat oven to 350°F. Grease a baking dish. Cook the potatoes in boiling salted water for 5-10 mins then drain and set aside.
    2. Heat 1 tbsp oil in a large saucepan and sauté the salami. Add the onions and peppers, briefly sauté then add the sauerkraut and cook for about 10 mins.
    3. Meanwhile, mix together the sour cream and eggs and season. Mix the potatoes with the sauerkraut mixture, transfer 1/2 to the prepared dish and top with 1/2 the cream mixture. Repeat then top with feta. Bake for 40-45 mins.
