  • 3 tablespoons vegetable oil (divided - 2 Tbsp and 1 Tbsp portions, we use peanut oil)
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (peeled and minced)
  • 1 cup zucchini (sliced)
  • 1 cup carrot (sliced)
  • 1 cup red bell pepper (sliced)
  • 1/4 cup low sodium chicken broth
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon ground pepper (white)
  • 3 tablespoons chili paste (we use Sambal Oelek)
  • 1 1/2 tablespoons oyster sauce

    Wow... This was just as good if not better than my local chinese resturant. The recipe was easy to follow. Very flavorful.
