- 1 lb. asparagus (¹, cut into bite-sized pieces, with ends trimmed and discarded)
- 3 cups kale leaves (shredded)
- 1 batch dressing (lemony, , see recipe below)
- 3 cups brussels sprouts (shredded, uncooked)
- 1 1/2 cups cooked quinoa
- 1/2 cup hummus
- 1 avocado (peeled, pitted and thinly-sliced)
- 4 eggs (cooked however you’d like , I soft-boiled mine)
- sunflower seeds (optional)
- toasted sesame seeds (optional)
- crushed red pepper (optional)
- 2 Tbsp. avocado oil (or olive oil)
- 2 Tbsp. lemon juice (freshly-squeezed)
- 2 tsp. Dijon mustard
- 1 garlic clove (minced)
