  • 1 teaspoon bicarbonate of soda
  • 270 grams tahini paste (light)
  • 4 tablespoons fresh lemon juice
  • 4 garlic cloves (peeled and crushed)
  • 100 milliliters cold water
  • sea salt
  • 2 tablespoons pine nuts (toasted in a dry pan over a medium heat for a couple of minutes or in the oven, the recipe suggest frying in a little unsalted butter but I chose not to)

  • 1 tablespoon sea salt
  • 1 tablespoon unsalted butter (or ghee)
  • 1 tablespoon olive oil
  • 10 grams flat-leaf parsley (finely chopped)
  • 1 green chilli (finely chopped)
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons white wine vinegar
  • 2 cloves garlic (peeled and crushed)
  • 1/4 teaspoon salt
