- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg (optional)
- 3 eggs
- 2 cups granulated white sugar
- 1 cup canola oil
- 2 tsp. vanilla extract
- 8 oz. crushed pineapple (with juice)
- 2 cups mashed bananas (from about 3-4 bananas)
- 1 cup finely chopped pecans
- 1 lb. cream cheese (softened)
- 1 cup unsalted butter (softened)
- 2 lb. sugar (confectioners’)
- 1 tsp. vanilla extract
- 1 Tbsp. cointreau
- 1 cup chopped pecans (roughly, for topping, optional, toasted)
- edible flowers (for garnish, optional)

Maybe the best cake and frosting I’ve ever made! Unbelievably delicious!
Moist, rich, fresh…divine.
The only thing I omitted is the liquer.
Otherwise the only other change was to bake as cupcakes vs. a cake.
I cannot wait to serve this at Thanksgiving tomorrow.
Thank you for sharing this amazing recipe.
(Note:agree with others, frosting yield is excessive. Half to 3/4 would be perfect.)

Moist and rich but not excessively so. Took it to work to treat my workmates and immediately had requests to bring it again.

I consider myself a novice baker and this turned out amazing. I only made 2 layers (I don't have 3 9" cake pans) and it worked, but I found the edges to be a little over done. I don't think anyone else noticed, but something to watch for. With the two layers, I had a LOT of frosting left over, so I would half it.
I did make substitutions in the frosting. I used a vanilla bean rather than extract, and used coconut water rather than cointreau and replace the liquid from the extract.

The cake itself is good. The frosting recipe could be cut in half being that I had a lot left over. I used a freshly cored pineapple and puréed.

I made cupcakes (yield 36) out of this recipie instead of a full cake and they are so yummy. Very similar to carrot cake, just a bit lighter. I made the full recipe of frosting and it was definitely too much. I found that the cupcakes do not need much frosting since it is a stronger taste than the cupcakes themselves (IMO anyway). I will definitely be making these again.
