I have a question. The recipe as it's printed above calls for. 1/4 c. Cake flour. Maybe that's just the way it shows up on my iPhone screen. Is it supposed to be 1-1/4 c. Flour?

I doubled the recipe to make cupcakes for a bridal shower, thinking most cake recipes make 24 cupcakes. Doubling the recipe yielded 84 cupcakes and not one went to waste. They were absolutely delicious. The only thing I changed was I used coconut water instead of the pineapple juice, and used half the measurement of vanilla and the other half with almond extract. I cooked them for 18 minutes and they came out perfect. Thank you for the amazing recipe, I have tagged this as a favorite and will definitely be making them again.
