- 2 cups plain flour
- 1 Tbsp. baking powder
- 1 ground cinnamon (teas)
- 1 cup oil
- 1 3/4 cups caster sugar
- 3 eggs (room temp)
- 2 vanilla essence (teasp)
- 1 1/2 cups grated carrot
- 225 grams crushed pineapple (can undrained, in syrup)
- 1 cup pecans (toasted coarsely chopped)
- 3/4 cup shredded coconut (moist)

Directions
- preheat oven 180/160 fan forced grease and line base and sides of 2x22cm round cake tins with baking paper
- sift flour, baking powder and cinnamon into bowl
- using electric mixer beat oil and sugar in a large bowl until thick and pale. Add eggs one by one beating until combined. beat in essence. Add flour mixture carrot, undrained pineapple, pecans and coconut. mix well.
- Divide batter between pans.bake 45 minor until skewer comes out clean. Stand cakes in pans for 5 min then transfer to wire rack to cool
