Delicious and fast to make (we made it for dinner instead of making it for breakfast). I used homemade enchilada sauce and used beef steak instead of chorizo. Also used 8 8-in flour tortillas instead of corn tortillas because I can’t find corn tortillas here. We served it with crème fraiche ( no sour cream here either). Will make again.
