- 2 cups basmati rice (– I used the everyday version i.e. with less aroma and shorter grain)
- 1 cup coconut (chopped, pieces to make coconut milk – you can use ready-made coconut milk from the stores)
- 1 medium onion (chopped)
- 1 1/2 Tbsp. ginger paste
- 1 green chilli (horizontally slit)
- 3 Tbsp. ghee (clarified butter)
- 1 cup carrot (optional)
- vegetables (optional)
- salt (as needed)
- sugar (as per taste if you have a sugar teeth like Bengalis do)
- 4 Tbsp. vegetable oil (I used sunflower oil but you can use any vegetable oil)
- 2 bay leaves
- 2 inches cinnamon stick (broken into two)
- 4 green cardamom pods
- 1 piece anise (optional)
- 6 cloves
- 1/2 tsp. cumin seeds (Jeera)
- 10 pieces cashew nuts
- 3 raisins (brown one)
- 3 black pepper corns
