Amazing! I have tried to follow other directions, but failed. This recipe made it so simple and delicious! It was so fantastic that I am making it a second night in a row. The only thing I did different was I used rosemary and basil for seasoning.

This was tasty, but it's also just an eggplant with salt... Don't expect it to be anything else. I really liked it and have definitely roasted an eggplant this way several times since. It WILL stick to the pan, so practice slicing it off the sheet with your spatula!

This didn't turn out very well for me. I followed all of the directions and the eggplant was a mess. It was very hard to get off of the pan.
