This is a terrible method to trim an artichoke - just cut the stems, chop in half, and scoop out the choke with a spoon and you’re done. The artichoke is now ready to steam or roast or whatever you plan to do with it.
If you just want the leaves or the heart, pull the leaves off and scoop out the heart after it is cooked - they will basically fall right apart.
