- 2 lb. cucumbers (garden fresh, cut into spears and rounds)
- 1/4 cup pickling salt (or kosher)
- 6 cloves garlic (peeled and smashed)
- 1 bunch fresh dill
- 2 hot peppers (any variety as long as you are comfortable with the heat from the garden, sliced into rings or simply cut in half)
- 1 tsp. coriander seed
- 1 tsp. mustard seed (I used black mustard seed)
- 1/4 cup distilled vinegar (plus more as needed)
