    I have made these twice now. This is the best gluten-free tortilla recipe that I have made yet. They are so good. I halved the xanthan gum, because too much of that stuff really messes with me, and they were fine. If you don’t have a tortilla press and are rolling them out by hand, don’t be afraid to use a lot of rice flour. They will stick if you don’t.
