- 2 cups brussels sprouts (ends removed and quartered)
- 3 apples (crisp, cored and sliced into thin wedges, about 1½ cups)
- 6 garlic cloves (peeled and smashed quickly under a knife or your palm)
- 1 Tbsp. olive oil
- 1/2 tsp. coarse sea salt
- 1/2 tsp. ground black pepper
- 4 cups vegetable stock (reduced sodium or salt-free)
- 2 bay leaves (dried)

- 2 1/16 cups oyster (shiitake, or king trumpet mushrooms)
- 2 Tbsp. ghee (olive oil or coconut oil)
- 1 cup minced shallot
- 1 cup celery (minced)
- 1 tsp. fresh rosemary (minced)
- 1/4 tsp. fresh thyme (minced)
- 3 Tbsp. coconut cream (full fat, skimmed from the top of a can of chilled coconut milk)
- 1 Tbsp. mellow white miso
- 1 cornbread (recipe cast iron, see below or 1 10 inch cornbread, cut into 1½ inch cubes, about 4 cups cornbread cubes total)

- 1 sprig fresh rosemary (to garnish, optional)
- apple slices (to garnish, squeeze lemon over top to prevent browning, optional)
- 1 1/2 cups yellow cornmeal (coarse, I use an heirloom Indian corn meal)
- 3/4 tsp. baking soda
- 1/2 tsp. sea salt (coarse Celtic)
- 1 tsp. smoked paprika
- 2 eggs (farm fresh)
- 1 1/2 cups full fat coconut milk
- 1 1/2 Tbsp. maple syrup
- 4 garlic cloves (minced)
- 1 Tbsp. lemon juice
- 4 Tbsp. ghee (or coconut oil)
