- 13.5 oz. unsweetened coconut milk (full-fat)
- 2 oz. Massaman curry paste (or, approximately ¼ cup of Thai red, mom’s preference and mine too, milder but flavorful)
- 3/4 cup creamy peanut butter (unsweetened, natural, Do not use regular peanut butter or anything with added emulsifiers. It must be the type of natural peanut butter that comes with natural peanut oil on top and no sugar added. I often use Smucker's.)
- 1/2 Tbsp. salt
- 3/4 cup sugar
- 2 Tbsp. apple cider vinegar (or white vinegar, Do not use white wine, red wine, balsamic, or anything else — not even rice vinegar)
- 1/2 cup water

was going to order thai satay take away until i came across this recipe which tasted exactly like a real satay sauce. money-saver and delicious!

I love this recipe. It is so good. I often use it as a sauce for stir fry. it's so yummy you want to eat it on everything!

Fantastic, I have always shy'd away from making satay sauce, but I decided to give it another go, and it was easy and very tasty, my whole family loved it. I added some dry roasted peanuts to give it a bit of a crunch.
