- 3 Tbsp. Sichuan peppercorns
- 3/4 cup crushed red pepper flakes (Asian, Sichuan chili flakes are the best)

So this wasn’t spicy at all for me. Perhaps I am using the wrong kind of chili flakes because it tasted like slightly flavorful oil when it was done

The chili flakes were crunchy instead of soft like when I get it at Chinese restaurants. What did I do wrong? I used a Chinese brand of chili flake, should I have used a ground chili instead? Thank you.
