I made this, but I’m going to be honest and say I used it as a basis for winging it on my own. For veggie slices, I used yellow squash, eggplant, zucchini, carrot, and yukon gold potato. I subbed in green onions because it’s what I had handy. And, I sprinkled Parmesan cheese on top. It was a HUGE hit and very delicious. I would definitely do this again.

This is a lovely dish. It was fun to make it with my daughter. I haven’t tasted it but how can you go wrong with these ingredients?!

good and so healthy! Wouldn’t even attempt unless you have a mandolin - everything needs to be consistent thickness

I was very pleased with the results. I did substitute sweet potato for the eggplant. I also did this in a lasagna pan the alternating rows.

Ratatouille without eggplant 🍆 (forgot to buy when grocery shopping 🙄). Squash, zucchini, onion, yellow bell pepper, tomato. I forgot to put in garlic too. Overall it was great! Plus extra for freezer meals. Plus I now want a mandolin!

I tweaked it a bit... used spray olive oil, added greek seasoning and red pepper parmesan cheese. Zucchini, crookneck squash, vidallia onion, and tomato. Turned out beautifully!
