    Author Kevin Preheat the oven to 450°F. Place the chicken breast side up in a roasting pan, cast iron skillet, frying pan, or any shallow ovenproof baking dish. Place chicken in oven and drop temp down to 400°F and roast for 1 hour. **I don't like my chicken cooked too long, so I would roast chicken pieces (on a rack) for about 20- 30 mins. Chicken is done when internal temperature registers 165°F in the thickest part of the thigh,. Typically 1 to 1 1/2 hours depending on size of chicken (4-5 pound whole chicken)
