Tasty fat-conscious recipe
I didn’t make it in the slow cooker
I used baked russet potatoes, bacon instead of pancetta, and instant mashed potato to thicken instead of flour
The thyme is a tasty addition

This was awful. I usually love recipes from the Kitchn, but this one is terrible. The milk curtled and the flavor is totally lacking. We had to throw the whole thing out. Total waste of time and money. I usually use cream or milk and add it at the end of the cooking process so it just adds creaminess, but doesn't curdle or otherwise turn. But I trusted this recipe since it specifically stated that the evaporated milk would work at the beginning of the recipe. Mistake. This is one I won't be making again.
