- 1 onion (small, peeled and roughly chopped)
- 3 carrots (2 -, chopped)
- 1 stalk celery
- 1 1/2 tsp. sea salt (to taste)
- 1 Tbsp. apple cider vinegar (for chicken bones - 1 tbsp + 1.5 tsp for fish - 2 tbsp for beef)
- water (enough to cover the bones)
- 1/2 tsp. peppercorns (whole, optional)
