OMG this was so good! I didn't have bone in pork chops but they worked really well anyway. Next time if all I have are the smaller thinner cops I may add a bit of brine while cooking in the oven. Letting them rest covered up was definitely the trick! These were awesome. Boyfriend said that I have to make these again!

Perfect. Brined with garlic. Tender and delicious. It is a regular for dinner and works well with company too.
