I left out the hot pepper and ginger as we don’t like hot. I also put a quartered orange in the cavity. Otherwise, I followed the recipe. My 13.1 lb. turkey was done in around 2 1/2 hours. I’m glad I checked temperature. It was, by far, the moistest turkey I have ever cooked. The smell was wonderful. Thank you for this recipe!

It turned out great! Very good and moist! Easy to make. The hardest part was the carving.
