  • 5 cups vegetable stock (low-fat stock)
  • 2 inches ginger (peeled, minced)
  • 3 1/2 tablespoons corn starch (mixed with 1/2 cup water)
  • 1 ounce mushroom caps (Mushrooms, white button, thin sliced)
  • 1 tofu (extra firm, pressed in paper towel for 20 minutes)
  • 1 tablespoon canola oil (or oil of choice)
  • 2 teaspoons sriracha (more or less per taste)
  • 4 tablespoons soy sauce (low sodium soy sauce, **adjust to taste)
  • 2 tablespoons rice vinegar (*unseasoned)
  • 1/4 teaspoon salt
  • 1 red chili (Thai, minced)
  • fresh herbs (cilantro, and/or thai basil, for garnish)
