This is awesome. Using it as a spread on chia seed toast right now. I used heavy cream instead of sour cream; used Satori chardonnay cheese instead of Parmiggani. Used whole milk mozzarella ball cut up. Added nutmeg, cayenne, Himalayan sea salt.
Used grapeseed oil instead of olive oil which smokes at that temperature becoming cancerous. Added a couple of Tablespoons of no hormones added butter.
Used garlic instead of onion.
And, squeezed out the liquid by putting the artichoke/spinach/garlic saute into a strainer and pressing out the liquid which is much, much less messy than paper towels :)
