- 2 Tbsp. mirin (preferably one made with real sake, like Takara)
- 1 lb. soba noodles (dried)
- 4 scallions (thinly sliced on the bias, whites and light greens only)
- 1 bunch watercress (trimmed)
- 1/2 cucumber (thinly sliced)
- 4 Tbsp. daikon (grated)
- 12 oz. smoked salmon (chunks, broken into bite-sized pieces)
- shichimi togarashi (to garnish, optional)
- bonito flakes (to garnish, optional)
- 2 qt. cold water (plus up to 3/4 cup)
- 2 oz. konbu (approximately 9"X 8" piece)
- 2 oz. bonito flakes
