- 1 Tbsp. sugar
- 2 tsp. kosher salt
- 1 pkg. active dry yeast
- 22 oz. flour (all-purpose, approximately 4 1/2 cups Best to measure by weight)
- 2 oz. unsalted butter (melted)
- vegetable oil (to grease the pan)
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk (beaten with 1 tablespoon water to make the egg wash)
- pretzel salt (I used Kosher)
- 1/4 cup mayo
- 1/4 cup Dijon mustard
- 3 Tbsp. light brown sugar (packed)
- 1/2 tsp. cider vinegar
- 2 Tbsp. unsalted butter
- 2 Tbsp. all purpose flour
- 1 cup whole milk
- 8 oz. extra sharp cheddar cheese (shredded from a block)
- kosher salt
