- 1 Tbsp. liquid smoke
- 3 bay leaves
- 1 tsp. Tahini (saltFor the Red Hot)
- 1/2 cup Tahini
- 1/3 cup Louisiana Hot Sauce (like Frank’s Red Hot)
- 1/4 cup water (plus more as needed)
- 2 Tbsp. nutritional yeast
- 1 clove garlic
- 2 cups diced tomatoes
- 1/3 cup finely chopped parsley
- 1 cup sliced green onion (finely)
- 2 Tbsp. red wine vinegar
- 1 dash fresh black pepper
- 1 dash salt
- 1 lb. greens (steamed, I used lacinto kale, see note)
- 6 cups cooked rice (for serving, I used red rice)

This was excellent. Used rice wine vinegar instead of the red wine and flipped the ratio of parsley and scallions based on our preferences. Lightly sautéed the kale as opposed to steaming to have everything fit better on the stove. Might cut the liquid smoke down a bit next time but overall this was a delish way to get our black eyed peas in today
