I absolutely love this dish! It is so comforting and delicious. When I was a kid my mom would make this for my siblings and I every week.
Ingredients

- 6 slices bacon
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped celery
- 1 tsp. minced garlic
- 1/2 lb. andouille sausage (sliced)
- 3 cups chicken broth (or stock)
- 2 cans black-eyed peas (undrained)
- 2 cups long-grain rice (uncooked)
- 1/4 cup green onion (sliced)
- 2 pinches salt (to taste)
- 1/2 tsp. Cajun seasoning

Directions
- Using kitchen shears, cut the bacon saute until slightly browned. Add the onion, green bell pepper and celery; saute for about 5 minutes until soft. Add the garlic and cook another minute. Add the sausage and cook another 3 minutes. Add the broth and black-eyed peas; bring to a boil. Add green onion. Season with salt, pepper, and Cajun seasoning. Add the bay leaf and return to a boil, cover, reduce heat and simmer for 30 mins. In a baking pan add cooked rice and other ingredients mix together then bake at 350 for 20 to 30 mins or until brown on top.. Oh and make sure it's not too much liquid you want some liquid so that it's not dry but not too much unless you want to serve it like a gumbo...
