- 1/4 cup honey
- 1 Tbsp. vegetable oil
- 1 tsp. lime zest (from one lime)
- 3 Tbsp. fresh lime juice (from 2 limes)
- 4 garlic cloves (peeled and roughly chopped)
- 1 1/2 squares fresh ginger (inch piece, peeled and roughly chopped)
- 1 1/2 Tbsp. Sriracha sauce
- 1 1/4 tsp. salt
- 2 1/2 lb. boneless skinless chicken thighs (between 8-10, trimmed and cut into 2-inch chunks)
- 2 Tbsp. chopped cilantro (plus a few whole sprigs for garnish)

Fantastic! Next time I'd use low sodium soy sauce but that's the only change.

Delicious! But be sure to oil the grill grates really, really well. I oiled but not enough and it stuck quite a bit. Good flavor though!

Made this for dinner last night and it was fantastic! Chicken was moist and flavourful and it did not take long to prep marinade and then cook the chicken. The only change I made was turning the leftover marinade into a sauce using a little cornstarch and water, then the last couple minutes we put it on the chicken while it was grilling. I also added a touch of salt to chicken before putting them on the grill. Will make again.
