Description
Friands are small almond cakes, popular in Australia and New Zealand, and are reminiscent to French financiers. Made with a combination of almond flour and wheat flour, these tea cakes are moist and a little spongy in texture. Whipped egg whites are incorporated into the batter for an airy texture. Bake time on these little tea cakes is 10 to 12 minutes. Serve topped with a drizzle of honey and toasted pumpkin seeds.

- 50 grams flour
- 100 grams almond flour

Directions
- Pre-heat the oven to 175C.
- Grease a muffin pan.
- Sift the sugar and flour into a large bowl. Add the almond flour.
