I used rice noodles and mixed in bell peppers and sweet peppers, everyone loved it! I put an extra TBS of sriracha to make it a bit spicier.

My zoodles were a little watery I would recommend pulling the chicken out, sautéing the zucchini noodles straining them adding salt and then continuing on with the recipe. Otherwise, everyone loved it and I even added a touch of Hoisin sauce.
