Preheat the oven to 350°F.

Line a large baking sheet with parchment paper. Set aside.

Drain the garbanzo beans into a fine-meshed sieve and rinse thoroughly with cold water. Turn garbanzo beans onto a clean dishcloth and pat dry with paper towels.

Transfer the garbanzo beans to a large mixing bowl. Drizzle with the honey and sprinkle with the cinnamon and salt. Toss with a rubber spatula until garbanzo beans are evenly coated.

Arrange the garbanzo beans in an even layer on the prepared baking sheet.

Roast the garbanzo beans on middle rack of oven, shaking pan twice during cook time, until slightly caramelized and crisp, 40-45 minutes.

Check to see that garbanzo beans are done. Remove from oven or add time as needed.

Transfer garbanzo beans to a bowl and serve immediately, drizzled with additional honey if desired.
