- 1/2 red onion (small, peeled and thinly sliced)

- 1/2 cup feta cheese (55g ,crumbled)
- 2 spring onions (scallions sliced into thin strips)
- 4 trout fillets (– about 115g, 4oz each)

- 2 Tbsp. wholegrain mustard

The trout was lovely but the salad was a bit tasteless so I’d suggest some sort of dressing. All in all tho it’s a nice healthy dish and will make again just with dressing for the salad
