I left out the cayenne because I don’t like a high spice level, but I will add a little in next time. Also, the cooking time mentioned is way too long for a smaller pork belly, so keep an eye on it if it’s small. This is an excellent recipe, though, and I highly recommend it.

Very tasty. Didn't turn out as crispy as i wanted though. I think I'll try chipotle powder instead of cayenne pepper next time.

Delicious! I used precooked pork belly from Trader Joe’s and instead of cooking the oven, I cooked it in a skillet and basted while cooking, turning every 2 minutes. Flavor was delicious!

Amazing. I used bourbon smoked paprika and mixed in some bourbon smoked sugar in worth the honey and sherry. I was phenomenal. Paired it with a red cabbage slaw to balance out the fat and spice. Boyfriend is very happy.
