I have made something similar to this for years. You can use brown sugar and melted butter, instead of honey you wish. I also love a bit of any or all of the following...according to taste...ground cinnamon, ground nutmeg, ground allspice. Nummy!!!

Awesome flavor, though i agree with other commenters on cooking it longer. I look forward to making it again. It's a nice flavorful change of pace.

Based on other reviews, I cut the carrots diagonally, which meant they came out tender in 15 minutes, but the flavor was lacking. Did everything else as the recipe called for. Probably won’t make again.

Delicious taste! I should have boiled them a bit first. They are not a soft as I’d like. Will make again with a few minutes of boiling before roasting.

they were delicious! The cut it asked for on the carrots was challenging but worth it! yum will make again. Everyone from my toddler to my husband loved them.

I cut the carrots diagonally but I do recommend more cooking time, not too much more. You don’t want mushy carrots

It was really good like a treat. I had to use maple syrup instead of honey. It wasn’t as moist looking but it taste great.

Good flavor. I cut it in half and needed to bake 10 mins longer. I didn’t have all same size so the larger ones needed the extra time.

It was wonderful! I used rainbow carrots and it was beautiful when it came out of the oven . Will definitely make this recipe again. It takes more like 20-30 minutes to cook, though.

Carrots needed to be cooked significantly longer and the pan should be lined. There was no way the creator of this recipe did not omit some of these critical preparation instructions. Disappointed.

It turned out great! A family hit! And the kids usually don’t like veggies but they were very interested in trying this .. the prepping of the carrots was a little time consuming but it was well worth the work !

This was fantastic. We all love this recipe. Third time to make it. I soften the carrots in the microwave 2-3 min. before baking & substitute lite margarine for butter but those are the only changes.
