I used a hand mixer not a stand mixer. it never got smooth til I added the egg and vanilla. the honey and sugar seemed to clump hard and the oil didn't wish to properly incorporate til more ingredients were added.the batter got thick and my old beater couldn't handle it!luckily it mixed well and still turned out amazing! I used regular sugar with cinnamon to coat the dough. I'd make these again for sure!
