Description
I am not a huge fan of desserts but I love indian desserts for their spices. This is a pie filling I created for the Yummly 2014 Annual Bake Off. It is a "not too sweet" filling with honey and some spices (cardamom, vanilla, cloves, ginger, saffron) I hoped would give my pie an indian dessert vibe. The reviews at the office were positive!
Ingredients

- 1 pie dough (2 discs prerolled, refrigerated 9-inch pie dough. I love Leadbetters's French Picnic Pastry Circles)
- 8 anjou pears (firm D', peeled, cored, sliced into 1/2 inch slices)
- 1/8 cup honey
- 1/8 cup sugar
- 1/4 cup all purpose flour
- 1/4 tsp. vanilla bean (ground, ground or scraped from a split vanilla bean)
- 1/8 tsp. ground cardamom
- 1/8 tsp. ground cloves
- 1/8 tsp. ground ginger
- 1 pinch saffron threads (pulverized)
- 1 Tbsp. unsalted butter (cut in small 1/4 inch cubes)
- 1 Tbsp. milk
- 1 Tbsp. sugar
- 1 Tbsp. unsalted butter (melted)

Directions
- Defrost your pie dough! Or make it from scratch and refrigerate. Just make sure you have 2 discs of dough for this pie.
- Preheat the oven to 350°F (180°C).
- In a large bowl, toss sliced pear segments with honey and sugar until coated.
