- 3 cups old-fashioned rolled oats (gluten free if needed)
- 1 cup raw almonds
- 1/2 cup unsweetened shredded coconut
- 1/3 cup flaxseed meal (Bob's Red Mill Ground, , do not use whole flaxseed)
- 1/4 cup wheat germ (substitute additional coconut to make gluten free)
- 1/2 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1/2 cup honey (*, I prefer to use raw honey)
- 2 Tbsp. virgin coconut oil (melted)
- 1 tsp. pure vanilla extract
- 1 large egg white
- 3/4 cup chocolate chips (mix-ins of choice:, apricots, figs, dates, craisins, raisins, etc., chopped if large)
