- 1 1/2 lb. red potatoes (or large gold, cut into large cubes)
- 8 oz. mushrooms (halved or quartered)
- 1 onion (large, chopped)
- 2 large carrots (thickly sliced)
- 2 celery (ribs, chopped)
- 2 bay leaves
- 2 vegetable bouillon cubes (or 2 tsp. Better Than Bouillon optional, use only if water is used instead of broth)
- 4 cloves garlic (minced)
- 1 Tbsp. coconut aminos (low sodium soy sauce, or tamari)
- 2 tsp. dried thyme leaves
- 1 tsp. dried rosemary (crushed)
- 1 tsp. poultry seasoning
- 1/2 tsp. rubbed sage
- freshly ground pepper (to taste)
