- 1/4 tsp. salt

- 1 tsp. Shaoxing wine
- 1/2 tsp. cornstarch
- 1/4 tsp. white pepper
- 2 Tbsp. oil
- 1 clove garlic (minced)
- 10 shiitake mushrooms (or dried black, soaked until softened and thinly sliced)
- 2 medium carrots (julienned, about 1 cup)
- 1 cup bamboo shoots (julienned, fresh is preferred, but canned is fine too)
- 1 napa cabbage (small, julienned, about 6 cups)
- 1 Tbsp. Shaoxing wine
- 2 Tbsp. light soy sauce
- 1 tsp. sesame oil
- 1/2 tsp. salt (or to taste)
- white pepper (to taste)
- 1/4 tsp. sugar
- 2 Tbsp. cornstarch (dissolved in 2 tablespoons cold water)
- 1 pkg. spring roll wrappers (square, this recipe makes about 20 spring rolls)
- 1 Tbsp. cornstarch (dissolved in 1 tablespoon boiling water for sealing the spring rolls)
- canola (or peanut or vegetable oil, for frying)
- 2 tsp. sugar
- 2 tsp. hot water
- 1 tsp. Worcestershire sauce
- 1 Tbsp. soy sauce
