- 2 red beets (medium, greens trimmed)
- olive oil
- 3 1/2 cups flour (all-purpose)
- 3 large eggs
- 1/2 cup unsalted butter
- 2 garlic cloves (minced)
- 1/4 tsp. black pepper
- Parmesan cheese (for garnish, optional)
- chopped fresh chives (for garnish, optional)
- Himalayan pink salt (for garnish, optional)

Directions
- Preheat the oven to 375°F.
- Prick the beets all over with a fork then rub them lightly with olive oil. Sprinkle the beets with salt and pepper then wrap them securely in foil and roast until fork tender, about 45 minutes. (Note: Depending on the size of your beets, it may take up to 1 hour until they are fork tender.)
- Once the beets are cool enough to handle, peel and then roughly chop them. Place the chopped beets in the small work bowl of the KitchenAid® Pro Line® Series 16-Cup Food Processor. Blend the beets into a smooth purée. Transfer 1/2 cup of the beet purée to a medium bowl then whisk in the eggs and a pinch of salt until combined.
