- 1/4 cup curing salt (pink, Also known as curing salt, salt peter or prague powder- NOT Himalayan pink salt. See safety note below.)

- 1/2 cup dark brown sugar (or firmly packed light)
- 1/4 cup honey
- 2 Tbsp. pickling spice
- 1 Tbsp. coriander seeds (whole)
- 1 Tbsp. yellow mustard seeds (whole)
- 4 cloves garlic (minced)
- 4 lb. beef brisket
- 1/4 cup ground coriander
- 2 Tbsp. freshly ground black pepper
- 2 Tbsp. smoked paprika

Excellent. Second time making it but this time did two pork tenderloins from Costco, brined for seven days and used the same amount of spices. Cooked it for 30 minutes at 350F, removed from the oven and upped the temperature to 425F then cooked for an additional 10 minutes. So good. With the cost of brisket this will be the route I’ll take going forward.
