- 16 oz. cremini mushrooms (stemmed and sliced)
- 3 cloves garlic (minced)
- 5 Tbsp. all-purpose flour (divided)
- 1 tsp. mustard powder (optional)
- 2 1/2 cups milk
- 1 tsp. kosher salt
- 1/2 cup cheddar cheese (grated)
- 1/2 cup canola oil (the oil should come up about 1/2″ from the bottom of the pan)
- 3 shallots (large, peeled and sliced into 1/4″ thick rings, you should have about 2 cups sliced)
