Line the bottom of a 10x15-inch rimmed baking sheet (also known as a jelly roll pan) with a silicone baking mat or parchment paper.
PRO TIP If you're going to make fruit leather often, consider investing in a silicone baking mat. The leather doesn't stick to it as it sometimes can with parchment, and the mat is reusable.

Stem the grapes and transfer to a colander. Rinse with cold water.

Put grapes in a blender and process on high until the mixture is liquid and no large pieces of grape skin remain, about 1 minute.

Strain the grape juice through a fine strainer into a medium saucepan, pressing with a wooden spoon or rubber spatula to extract the juice. Discard the skins. Stir the honey and lemon juice into the grape juice.

Set the saucepan over medium-high heat and bring juice to a boil. Reduce heat to a simmer and cook, stirring occasionally, until liquid is slightly thickened and reduced to about 1 1/4 cups, 12-15 minutes.

Pour the grape mixture onto the center of the prepared baking sheet. Tilt the pan to even the mixture to 1/8 inch thick (measure to check). It's okay if the mixture doesn't cover the entire pan.
PRO TIP It's important for even drying to get the fruit mixture the right thickness, so pull out your ruler!

Bake the grape mixture on middle rack of oven until leather still feels slightly tacky when touched but no longer sticks to your finger (check it quickly and carefully), 5-6 hours.

Check to see that fruit leather is done. Remove from oven or add time as needed.

Homemade Grape Fruit Leather
Let fruit leather cool to room temperature. Peel from the silicone mat or parchment, then cut into strips about 1 1/2x4 inches, using a pizza cutter, knife, or scissors. Serve, or store in an airtight container between pieces of parchment or waxed paper in the refrigerator for 2 weeks.
